Warm Apple & Cinnamon Oatmeal

Make a comforting apple and cinnamon oatmeal breakfast with rolled oats, warm milk and lightly cooked apples. Serves four in about 25 minutes.

Soft apples, fragrant cinnamon and creamy rolled oats make an easy breakfast for a slower morning at home. Cook the topping in a small skillet while the oats simmer, then bring both to the table warm.

Ingredients

For the apples

  • 2 medium apples, cored and cut into small, even pieces
  • 1 tablespoon unsalted butter
  • 1 tablespoon maple syrup, plus more to taste
  • 1 teaspoon ground cinnamon
  • 3 tablespoons water, with a little more if needed

For the oatmeal

  • 2 cups old-fashioned rolled oats
  • 2 cups whole milk or your preferred unsweetened milk alternative
  • 2 cups water
  • ¼ teaspoon salt
  • 1 teaspoon vanilla extract
  • ¼ cup chopped walnuts, optional

Directions

  1. Melt the butter in a skillet over medium heat. Add the apple pieces, maple syrup, cinnamon and 3 tablespoons water. Stir to coat the fruit.
  2. Lower the heat to medium-low and cook for about 8 to 12 minutes, stirring occasionally, until the apples are tender enough for your preference. Add a small splash of water if the skillet begins to dry out. Set aside while you finish the oats.
  3. Combine the milk, 2 cups water and salt in a medium saucepan. Bring to a gentle simmer over medium heat, watching closely so the milk stays in the pan.
  4. Stir in the rolled oats. Reduce the heat and simmer gently for about 5 to 8 minutes, stirring frequently, until the oats are tender and the mixture is creamy. Oat brands vary, so check the package instructions and adjust the cooking time if needed.
  5. Remove the saucepan from the heat and stir in the vanilla. Add a little extra milk or water if you prefer a looser texture.
  6. Divide the oatmeal among four bowls. Spoon the warm apples over the top and add the optional walnuts. Taste before adding extra maple syrup, since the apples contribute their own sweetness.

Give the apples a head start

Small, evenly cut pieces soften more consistently. Begin cooking the topping before the oats, then keep an eye on both pans. Firmer apples may need a little longer, while softer varieties can become tender sooner.

Serve it your way

Put optional toppings in separate small bowls so each person can finish their own breakfast. A spoonful of plain yogurt, a splash of warm milk or a little additional cinnamon can change the finish without changing the basic method.

Milk and walnuts are included in this recipe. Choose ingredients that suit the people you are serving and check product labels when making substitutions. Approximate times depend on the apple variety, pan and oat brand.
